How to make lemon ice cream

Ingredients:

Two lemons

150g caster sugar

300ml double cream

Method:

Start by finely grating the zest from one of the lemons, then squeeze the juice from both.

Strain the juice into the zest and add the sugar, whilst stirring to combine.

Gradually add the cream; it will thicken slightly as it is stirred.

Simply pour the ice cream mixture into a container small enough to fit in your freezer.

Place the container into the freezer, checking after half an hour to see if it is mushy.

Once mushy, take it out of the freezer, mix with a fork and place it back into the freezer until firm.

This ice cream is perfect with cake, fruit, or simply on its own with a cone.

You could even swirl some lemon curd into this ice cream if you fancy that extra zing.
